I’m very passionate about food and cooking and want to know if becoming a chef is the best choice and will i be able to support a family with this carreer choice?

They do not get paid very much. It also depends on what restraunts you work at. About 50,000 $ per year. on the other hand if you were one of the star tv chefs on tv you would get paid much more than that.

Le Creuset cookware has excellent characteristics when it comes to heat transfer. Being heavier (like cast iron), it takes quite a bit to heat initially, but once heated it transfers heat evenly and constantly. It can be used on the stove and in the over at high heats making it adept for searing and then transferring to the over to continue cooking either in a dry environment or as part of a braise – also enabled by nicely fitting lids.

Non-stick cookware has its place, even in a professional chef’s arsenal – omelets and crepes for example. The issue that most professional chefs voice with non-stick are related to high-heat applications such as searing and use for finishing in the oven as these are no-no’s with most non-stick pans. The heat issue with non-stick pans can be two-fold; 1) the pan can be ruined and 2) while the verdict is still out, there have been studies showing that non-stick at high temperatures can release toxic gas and chemicals (see source)

I have good quality knives (mostly Wusthoff). I use a Chef’s Choice to sharpen them. what do professionals think of this sharpener? How do professionals sharpen their knives?

Sharpening devices tend to grind away too much of the blade. The best chefs use (or have an expert use) a whetstone and/or a knife steel (honing steel), meaning that the blade is sharpened manually.

    Is there a restaurant in Montreal that does “chef’s choice”?

    Question : Is there a restaurant in Montreal that does “chef’s choice”?
    I will be on Montreal on Saturday 5/17 for my wife’s 50th birthday. I want a special French cuisine dinner, but would like a “pay 1 price, get the chef’s choice” treatment. Typically, this is a 5 course dinner, but all selectiions are chef’s choice, including the wines.

    We will be in “old town” Montreal near the Notre Dame cathedral, so a restaurant within walking distance would be wonderful.

    once in Montreal you will have a choice of restaurants that you will find nowhere else… Especially in Old Montreal … take a walk on St-Paul street and gaze upon all the great menu’s posted on the front window of a given restaurant ..

    I have used stage 1 for maybe a total of 2 or 3 minutes. Do I need to use stage 1 longer? I have gotten a burr on other knives, and it didn’t take very long. Is this knife just that hard?

    As a Chef, I can tell you that there is no such thing. Just like there is no “best” set of pots and pans.

    For knives and not being specialty knives, the bottom line is fully forged high carbon stainless steel. You want the metal from the blade to be thick at the top, and work it’s way right through the handle as one solid piece of steel. The thing to avoid in most cases is “stamped” knives. These are knives that are punched out of a sheet of metal, and the handle is mostly synthetic built around the tiny piece of steel that goes through it.

    Forged knives will last you a lifetime with proper care. Stamped knives will give you a good scar eventually.

    German knives like Henkle are among the most popular. I would try an American brand like Lamson Sharpe.

    And for added measure – I’ve had many “Pampered Chef” consultants claim their knives (carbon steel – one piece construction, “balanced”) are superior to Henckels knives but many Pampered Chef consultants have never heard of Sabatier knives. How do they all compare?

    Is it possible some people choose Henckels because they are more easily found in nation-wide retail stores? Sabatier knives seem to be found in knife specialty shops (and I’m in a city of almost 1 million people.)

    Henckels knives definately. They are all my dad (who is a chef) talks about.
