Question : Wedding catering. . . ?
what would be the best food/appetizers to serve at a wedding with a very diverse crowd? Totaling about 100 people give or take 10 or so that might flake at the last minute

I own a country club and handle all of the wedding planning for the club. My experience is that most people choose items that are main stream and that people are familiar with. Although I have some unusual items on my wedding menu, these items are rarely chosen.
What you choose would depend on regional preferences as well. I’m located in New England. The meals that are familiar here would probably not be the right choice for a wedding located in the southwest or California.
I’m not sure what you mean by diverse, but you should probably consider a vegetarian dish as an option. Also, stay away from nuts and mushrooms, since many people have allergies. Hopefully if your guests have food allergies, they will let you know in advance.
If you have a seafood, chicken, beef and vegetarian option, this should cover the bases.
are you talking pass trays (waiters walking around with trays passing food), buffets, or sit down meal? All of this makes a big difference in food choices. Also what area are you having the wedding, it really does make a difference. For example, I live in Louisiana so we had some Crawfish Boudin Balls as one of the appetizers at my wedding, but that wouldn’t work outside of Louisiana! Please elaborate and I would be glad to give some suggestions!
