just got Jack lalane juicer and don’t know what to do with 5lbs worth of carrot pulp?

I used to buy a carrot raisin salad at a health food store and from looking at the carrot part, I think they used the carrot pulp from making carrot juice. It was my favorite salad.

The cake below is delicious.

Carrot Cake (with buttermilk) – Jane’s recipe

3 c flour
2 tsp b soda
1/2 tsp cinnamon
1/2 tsp salt
3 eggs
3/4 c veg oil
3/4 c buttermilk
2 c sugar
2 tsp vanilla
1 small can crushed pineapple, drained
2 c grated carrots
3 1/2 oz flaked coconut
1 c chopped walnuts
1 c raisins (optional)

Sift first 4 ingredients together. Set aside
Beat eggs, add oil, buttermilk, sugar and vanilla. Mix well

Add dry ingredients to egg mixture, mix well

Add pineapple, nuts, coconut and raisins if used

Pour into a 13 x 9 x 2 pan (buttered and floured)

Bake @ 350 F. for 55 minutes

FROSTING:
2 c sugar
1/2 tsp soda
1/2 c buttermilk
1 cube of butter
1 Tbsp white corn syrup
1 tsp vanilla

Add all to a small saucepan and heat slowly until butter and sugar are incorporated and mixture bubbles. Stir to mix well. Pour over hot cake when it comes from the oven.

Sunset Salad

1 package (6 oz.) Jello Orange gelatin
1 tsp salt
2 cups boiling water
1 can (1 lb. 4 oz.) crushed pineapple in juice
2 Tab lemon juices
2 cups coarsely grated carrots

1.Dissolve gelatin and salt in boiling water.

2.Add remaining ingredients.

3.Chill until thickened, then stir and pour into 6-cup mold or 10 to 12 individual molds.

4.Serve with crisp greens and mayonnaise.

Makes 10 to 12 servings.
